They are super easy to make and freeze easily so I always have some on hand.

I love making these muffins ahead of time—they’re great for meal prepping or freezing for later. If you have some extra muffins on hand, just pop them in the freezer once they are fully cooled, and they’ll be good to go whenever you need a quick breakfast. Just thaw in the microwave at 50% heat for about 1 minute and then slice in half and toast. Or you could just thaw in the microwarve for about 2 minutes at 50% power and skip the toaster alltogether.

These muffins make an excellent option for your little ones, as they contain no refined sugars, no gluten, and no seed oils. They’re packed with healthy fats from the coconut or avocado oil and the richness of almond flour. And because they’re naturally sweetened with raw blue agave, they won’t send your kids on a sugar rush! My healthy muffins and sweet breads are breakfast staples in my house.

Ingredients:

Dry Ingredients:

  • 2 cups almond flour
  • 1/4 cup arrowroot powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons poppy seeds

Wet Ingredients:

  • 4 large eggs
  • 1/4 cup raw blue agave
  • Zest of 1 lemon
  • Juice of 1-2 lemons (about 1/3 cup)
  • 1/4 cup oil (choose coconut, avocado, or olive oil)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Instructions:

  1. Prep the Dry Ingredients: In a large bowl (or food processor, I make most recipes in my Cuisinart food processor making life easy with one bowl/one mixer for cleanup), combine the almond flour, arrowroot powder, baking soda, and salt. Stir/Pulse on high until everything is well mixed. Tip: Arrowroot flour is key to giving these muffins a light, fluffy texture, which is not always easy to achieve in gluten-free baked goods. Arrowroot flour is a staple in my muffin/cupcake base.
  2. Mix the Wet Ingredients: Add the eggs, agave, lemon zest, lemon juice, oil, vanilla extract, and almond extract. Blend until fully incorporated.
  3. Add Poppy Seeds: Once everything is fully mixed, gently fold in the 2 tablespoons of poppy seeds. The seeds will add a nice crunch and subtle flavor to each muffin.
  4. Prepare the Muffin Tin: Grease your muffin tin well with butter (I’ve found that butter works best to prevent sticking, but you can sub with coconut oil). Tip: I almost never use liners, they tend to stick and have questionable compounds. I prefer using a high-quality muffin pan, like a Nordic Ware pan, that’s free from toxic chemicals.
  5. Bake: Fill each muffin cup about 2/3 of the way full. Bake at 350°F for approximately 18 minutes or until the edges are just slightly browned. You can test doneness by inserting a toothpick—it should come out clean when done.

Cool and Enjoy: Let the muffins cool for a few minutes in the pan before transferring them to a wire rack. These are delicious when warm, but I prefer them cool or room temperature.
